Aji Amarillo


The Aji Amarillo is one of the most popular chillies in Peru. It has a crisp flesh and lots of fruity flavour with delicious mango and passionfruit undertones. The title ‘aji’ means ‘chilli’ in Spanish is applied to many of the Peruvian chillies. Aji Amarillo paste is a widely used condiment throughout South America. When dried, this variety is known as Aji Mirasol and takes on a delicious apricot flavour.
